The deboning of pork into various primal cuts is undertaken in this section. The range of these primal
cuts includes mainly, pork legs, pork shoulders, loins, bellies and pork trimmings for sausage and
polony production. These various cuts are cut mainly as per Danish ESS Foods catalogue which is an
internationally renowned food distributor and under high level of hygiene standards.
The section is currently doing 300 pigs a day and plans are underway to revamp the section and
increase the throughput to 450 pigs per day. The highly trained and skilled staff employed in this
section ensures that high levels of production quality and hygiene are maintained throughout the
production times.

This section despatches only primal cuts which are mainly packed in boxes. The boxes are loaded out on batches and serial numbers to ensure traceability.
